Chicken Pot Pie Night!

If you know me you know I am a beginner when it comes to cooking. I love finding easy and yummy recipes that I can make for the kiddos and hubs. While browsing blogs I came upon this awesome site and found the recipe for Chicken Pot Pie. I decided to try it out and I was really proud of the end result.



Here is the recipe:

Total Time: 40 Minutes

Ingredients:

  • 2 unbaked pie crusts ( I used the Pillsbury ready to roll pie crusts)
  • 3 chicken breasts
  • 5 red potatoes
  • 2 can Cream of Chicken soup
  • 1 bag frozen peas and carrots or mixed vegetables- thawed
  • 1 sweet onion - diced
  • butter
  • 1 egg
1. Heat oven to 450.

2. Heat two large pans of water - these are for the chicken and potatoes

3. Trim fat from chicken and dice the potatoes, then add to the boiling water.

4. Cook the bottom of the pie crust first, in the oven. Just follow the directions on the back of the pie crust box for a "one crust pie" - cook for 9 minutes. After cooking, turn the oven down to 400 to cook the pie. You crust will come out golden brown.

5. saute the onion in butter until it is translucent and tender- set aside (it can even be a little golden. I cut my onion pieces really small and I didnt even taste them in the pie. You can omit the onion completely, but it does give the pie great flavor)

6. In a mixing bowl, combine cream of chicken soup, chicken, vegetables, onion, and potatoes. Season to taste.

7.Pour the mixture into the already baked pie crust.

8. Add top crust and trim! Try to make it look pretty! :D

9. whisk the egg in a small bowl and baste over the top crust. It gives it a great shine.

10. cut some vent holes on top of the pie with a knife to provide steam release while the pie is baking.

11. Bake the pie for 40-45 minutes or until the crust is golden brown. Remove from the oven and allow to sit for a few minutes before serving.

VOILA! I tried this recipe and the kids and husband loved it! It will become a staple in our home for sure! Below are pictures of my creation! Enjoy! :)

No Doubt Concert 2009!!!

Wow....what can I say....I went to the No Doubt concert with my cousin and had the time of my life. Not only did we have awesome seats because of my cousin, but they played all the songs that just morphed me back to high school. I danced, I laughed, I got stung by a bee ( I think) lol but I had a blast doing it and all with two of my favorite people in the world: My cousins :) Its one for the books for sure Jessie.

Los Graduates Elementary School!!

I cant believe how time is flying. Just a few years ago I was taking my boy to his first day of Kindergarten and now here he is graduating elementary school. I've seen my little guy go from little boy to young man. Christian, Christina and I were joined by my brother and his fiancee to see our little guy receive his diploma. I could not be prouder of my son :)

Family Fun Night 09

Today we attended little C's last Family Fun Night at his school. It was a little sad for him since it was his last as a fifth grader. We all had a blast having dinner, and playing games all evening long.

The kids started off by getting their "crazy hair" done:



Los then went off to play with his classmates and C and I were left to play games with Christina. First we stopped by the face painting station where I thought my daughter would choose a cute design to put on her face. I was expecting a butterfly, a ladybug, or maybe even a rainbow. To my surprise my daughter shouts out..." I WANT A SPIDER...A SPIDERWEB!" so a spider it was.




Have I mentioned how much I HATE spiders...Yes its official my daughter wants to torture me!

We eventually found los who was having fun with his buddies and we went home. It was an awesome time!

Sunset Beach Trip

C surprised me today by picking me up from work and bringing me a change of clothes. He would not tell me what we were doing or where we were going. We got on the 280 and I realized we were heading to San Francisco. We headed over to ocean beach to watch the sunset...The only problem? Um there was no sun out and it was FREEZING COLD! We made the best of it and walked around the beach. The kids loooooved it ran around the beach picking up sand dollars. It was awesome :)

Memorial Day 09

Memorial day was spent in the company of family, friends, and good food :) We BBQ'd burgers, hot dogs and I made my wave your flag cheesecake that the hubby likes very much. We all hung out and played Rock band. It was also our first Memorial Day in our new home. I love making new memories with my family. This was very special for us.

Making my usual "Wave your flag cheesecake" Its a staple in our family for Memorial Day and 4th of July!

Happy Birthday to me X2!!

Words cannot even begin to describe how happy I was to walk into my home on this Saturday afternoon and see all of my family and friends standing in the living room. My wonderful husband along with my family planned a surprise 30th birthday party for me. The set up in the backyard was awesome. I couldnt believe my eyes! They all got together and set up in 3 hours! I did not suspect a thing until I came home to a house full of family and friends. My cousin came all the way from Roseville for the celebration as well. That was a shock all on its own since I had not seen her in a very long time and missed her dearly. The surprises did not end there....towards the evening..my brother surprised me with a mariachi! Wow....words cannot begin to describe how blessed I am with such a wonderful husband, family and friends. We all had a blast and I will never forget it!

I was taken to my best friends house and while we were there for close to 3 hours. I had fun hanging out with her...later I found out she was hungover from the night before and was sick in the bathroom!!! HA!!


When I finally got to my house I was greeted like this:




I had a great time opening presents and eating some yummy food. The set up in the backyard was awesome. We had a taquero along with a flat screen tv to watch the UFC fight that was on that night :D




Thank you everyone for making my day so especial and memorable. I will never forget it and I am so lucky to have you all. I love you guys!!!
